Paleo Banana Zucchini Bread

Gluten Free, Dairy Free.


Made with almond flour, ground flaxseed and all gluten-free and dairy-free ingredients.


No added sugar needed, but you certainly could add some coconut sugar or maple syrup if you’d like the recipe to be sweeter than it is.



You may simply omit the chocolate gems from this recipe and sweeten it with just banana. That is how I usually make it, but last night my 9-year-old wanted a real treat so she added the Hu gems to make it “special”. But it tastes great without it as well.


Pro Tip: the riper the banana, the sweeter the loaf will be so wait for those perfectly freckled bananas.




Making this zucchini bread is a great way to sneak in extra vegetables to your baked goods. Especially if you have any picky kids or significant others. This is a recipe the whole family enjoys.


INGREDIENTS


  • 1 cup mashed banana - the riper the better. It adds sweetness to this recipe;

  • 1 cup shredded zucchini (Grate it, then squeeze out all of the excess moisture! VERY IMPORTANT STEP)

  • 3 pasture-raised eggs

  • 2 cups almond flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon Maldon Sea Salt Flakes (or any sea salt you have, I find it that it brings more flavor to the bread).

Optional:

Add ½ cup of Hu Chocolate Gems



INSTRUCTIONS

Preheat oven to 350 degrees and line a loaf pan with Parchment paper and grease a little coconut oil on top.

(I like If "You Care Baking Sheet", see note below, they are unbleached so you are not adding toxins to your food)

In a large bowl whisk together banana, zucchini and eggs until smooth;

Mix in almond flour, flaxseed, baking powder and cinnamon until creamy;

Add batter to loaf pan and bake for 45-50 minutes (or until toothpick comes out clean);

Allow the bread to cool for a few minutes then slice it and enjoy. Tastes great if you warm it in a toaster and add some ghee to it as well.


NOTES

If You Care Baking Sheets – a MUST on every kitchen!

They line my baking sheets when I roasted veggies, bake cookies and I line my loaf pan with them to help for an easy removal.

You can also use their loaf pan too to make it even easier and baking cups. Pretty good brand.
