Cherry Chia Seed Pudding
Ingredients for pudding:
1 can full fat coconut milk
1/2 cup cherries pits removed
1/2 cup chia seeds
1/8 cup Honey
1 tsp Vanilla
1/4 tsp Cinnamon

Ingredients for cherry glaze:
2 cups cherries pitted, halved
1/4 cup Honey
1/8 cup Water
INSTRUCTIONS
For Chia Seed Pudding
Remove pits from cherries.
Add all the ingredients for the chia seed pudding (except chia seeds) into a food processor.
Process on high for about 30 seconds or until ingredients are combined. (You don't want to process it too long otherwise you want have chunks of cherries in the pudding.)
Stir in the chia seeds.
Pour mixture into a sealed container.
Refrigerate overnight or for about 6 hours.
For Cherry Glaze
Pit cherries and cut in half.
Add cherries, honey, and water to a saucepan.
Turn the heat on high.
Once the mixture starts to boil, reduce to med-high and continue to cook for 8 minutes.
Allow cherry glaze to cool.
Store in fridge in a sealed container.
Once the chia seed pudding has set, serve topped with the cherry glaze.
