Updated: Mar 25

Pro tip: It's all about the two-hour hour simmer.

Don't cut it short.

This dish is delicious served over riced cauliflower or and steamed spinach.

INGREDIENTS

1 whole chicken with skin, chopped into 8 pieces (or substitute chicken thighs) Sea salt to taste Freshly ground pepper Ground cinnamon Turmeric 2 tablespoons olive oil 1 medium to large yellow onion, chopped 4 cloves garlic, chopped 2 cinnamon sticks 1 4-ounce can whole peeled italian tomatoes (no sugar added) 1-2 cups Chicken Bone Broth I used fresh cilantro to garnish. It works well with fresh mint &, parsley as well.

1. Wash and dry chicken pieces. Season all over with salt, pepper, anda light sprinkling of ground cinnamon and turmeric. 2. Coat a large pot with olive oil and place over medium heat. 3. When oil is heated, sear chicken pieces for 1 minute on each side, until the skin is browned.Remove chicken pieces from pan and set aside. 4. Lower heat to medium-high and add onions. Stir for 1 minute or until soft, then add garlic. Let cook for another minute, until translucent. Add cinnamon sticks, tomatoes, and broth, and season with salt and pepper.Stir and bring to a simmer. Add chicken pieces back into the pot, submerging them in the liquid.Simmer for about 2 hours uncovered, shaking the pan from time to time to move to chicken around, until meat is falling off the bone. (Don’t keep this step! The magic happens at the 2 hour mark!) 4. Garnish with herbs of choice and serve. Recipe adapted from younger by Dr. Gottfried
