4 Super Easy CHICKEN Recipes

I always have chicken marinating in the fridge. With two kids, I need to make sure I can have lunch on the table in less than 30 minutes and I’ve become famous among school friends by having the best lunch in the hood!

You will not believe how simple it is to always be prepared to have real food on the table in minutes.

These combos are simple and easy to whip up for the week.

You can use a silicone, reusable, dishwasher safe like stasher bag to marinate the chicken, and to help cut down on use of plastic for the environment. But I honestly prefer my glass containers that are easy to store and to clean, just put them on the dishwasher!

What to do:

1. Combine ingredients directly in the glass container.

2. Place organic chicken breast and shake the container to spread the marinade over the chicken.

3. Marinade in fridge for 2 hours up to 3 days.

4. Bake for 25 min at 450 degrees for a 7oz breast or grill over medium heat with Ghee.

Below are my go-to marinades.

Each makes 1 serving, so multiply for each chicken breast you have.

I usually have 1 to 2 organic chicken breasts thin sliced to make cooking quicker.

CLASSIC & EASY (plus super kids friendly)

  • 1tbs olive oil

  • Juice of ½ a lemon

  • 1 tsp dry grey salt

  • 1 tsp Pepper

  • 1 tsp Granulated garlic

  • 1tsp Parsley

Since I do this one A LOT, I already have a container premixed with the dry ingredients ready to use.

When using this marinade, I just grill it on a pan with ghee.

This marinade goes well if you want to bread and make “nuggets”, I like to use Paleo Powder Grain Free Seasoned Coating Mix Almond+ Flax . They also have awesome pre made rubs that have options of AIP diet and other dietary considerations.

SavorySpiceShop.com is a good place to get rubs as well. The one that I use often is Santa Maria Sea Salted BBQ Rub. They also have good salts and pepper/herbs blend to play with!

CILANTRO LIME

  • 1 tbsp olive oil

  • 1 lime

  • 1 tsp honey

  • 1/4 cup cilantro leaves chopped

  • 1 clove garlic minced

  • Sea salt to taste

COCONUT CURRY

  • 1/2 cup full fat coconut milk

  • 1 tbsp red curry paste

  • 1 tbsp curry powder

  • 1 lime

  • Sea salt to taste

JALAPEÑO LIME MARINADE

  • 1 lime

  • 1 tbsp avocado oil

  • 1-2 jalapeños, (cut)

  • Sea salt to taste

LEMON GINGER

  • 1 tbsp olive oil

  • 1 lemon

  • 1 tsp minced ginger

  • 1/8 tsp red pepper flake

  • Sea salt to taste
